Cooking on Ash

The preparation of tandoori, which is a closed hearth buried in a meter of soil, requires knowledge, experience and technique. In the tandoor wells still established in many villages, the breads are baked by sticking to the hot wall of the hearth.

It is a traditional method used frequently in dishes such as small rolled pastry with onion white cheese and parsley filing and Turkish pancake.

These stoves, which are also used for heating purposes, have an oven section and the upper section can also be used as a hearth.
